Tofu takes on all the tastes that you want to add very easily and marinating requires only 30 minutes, but you can marinate tofu over night.

To respect the vegetarian’s choice of not eating meat, I prepare the dishes before the meats are out of the fridge. I make sure no meaty contamination can happen.

If you have a few vegetarians in the family or as friends, then consider buying another barbecue. You can buy one of those cheap throw away barbecues and use that grill for the vegetarian foods or you can invest in a small kettledrum type.

There are two main types of Tofu that we are concerned with. They are,

  1. Soft or Silken.
    Has the consistency of thick custard or mayonnaise. The soft tofu is great to use in sauces, dips and desserts.

  2. Firm or Dried.
    This comes in block form. The firm tofu is much better for using on the barbecue as it holds its shape.

Pressing the tofu before use is the best practice, once out of the packet, rinse under cold running water, squeeze out the moisture and press dry with kitchen towel. The harder you press the more moisture will come out. In turn the tofu will soak up more marinade. But don’t press so hard that you break the tofu.

Freezing the tofu and defrosting it again turns it into a more “meaty” texture. The colour also changes but that’s not important.
