There are rules of course regarding citrus juices and vinegars etc. Acid
will start to dissolve the flesh if you marinade them for to long. Especially
fish as the citrus actually starts cooking them after about an hour.
How hot is too hot? The spice is up to you, but
remember your guest’s palette may not be as fire proof as yours.

Hints & Tips
Be sure to get the meat from fridge to the Grill as soon as possible.
Drain the meat as to get the excess marinade off.
This avoids a big flare up that can happen when the marinade hits the hot coals, especially the Tequila one.
Brush on the marinade during cooking to keep in moisture in the meat. Especially if you are cooking steak well done.
But do not re-use leftover marinade used for the meat as a dipping sauce.
Separate some in to a different bowl and keep refrigerated.
