What is it about Grilling perfect steak? It does take a bit more thought than just firing up the barbecue, letting the grill get Hot, throwing on the meat and start cooking steak.

But thankfully not much more.

One of my aims for Barbecue 'N' Grill Recipes.com, is to make recipes easier for all, if you don’t need to do things, then we don’t mention it in the method. With Beef Steak however, I think you need to look after it before cooking, otherwise you will find it hard grilling perfect steak.

You have got to get the right cut of steak for a start.

You could Still use one of the following recipe pages to enhance you steak, but on this page we'll focus on how to cook steak.
Steak Marinades,
Barbecue Dips or Barbecue Sauces.

The Steak

Porterhouse Steak My Favourite Steaks are, the Fillet or tenderloin steak, the T-Bone or the porterhouse steak. Of course the T-Bone is Tenderloin steak on the one side and Strip loin steak on the other. I only barbecue steak like this if I don’t have many guests coming or it’s Valentines Day and it's just the Wife, Me and a couple of beers :-)

These cuts of beef are Great, but You have got to make a difficult decision in choosing which steak suits your needs. The price your willing to pay, how many guests your cooking for, the physical size of your barbecue And this is all before you even try your hand at grilling perfect Steak.

The other cuts of beefsteak I would use are the Sirloin steak, Rump Steak or Round Steak, same thing really, Chuck Steak, Rib Eye Steak or in the last instance, Cube Steak (A bit tougher than the other Steaks so I would use a Marinade or I'd tenderise it with a mallet!)

Your Guide on how to Cook Steak

Grilling Perfect Steaks have to be cooked for the individual; so depending on how they like their perfect steak, you have to adjust your cooking times.

Raw Steak Raw Steak
This steak is not cooked; Although you need bring steaks to room temperature approx 30 mins before you intend to grill them.

How to Barbecue a Blue Steak
This Steak is VERY Rare. This steak is cooked very quickly on the hottest part of your grill, Seared on the outside but is warmed through more than cooked.

It is essential for a blue steak that the meat is at room temperature before cooking, because of the short amount of time the meat will be on the grill for, will not be enough to warm the centre of a cold steak.

How to grill Steak Rare
Having the grill very hot, the out side of the steak is starting to turn brown rather than grey. It’s mostly red and raw looking in the centre but the rest of the steak is pinkish.

Cooking Steak Medium Rare Cooking Steak Medium Rare
This is the countries most popular way to cook steak. It’s still red in the middle but bloody too.

Barbecue your steak to Medium
It's Pink all the way through. The slower cooking temperature of the barbecue stops the steak from cremation on the outside.

Medium Well Steak Medium Well Steak
Still a bit of pink left but all juices have gone by this stage.

Well done
Grey all the way through. Very dry and tough.

The Poor Cremated Steak
Same as the well done but slightly more burnt on the outside.
(Believe it or not, some people like eating their steak like this! In the end, you are still grilling perfect steak, for them).

Time for Grilling Perfect Steak

Barbecue v’s Grilling

This is not the age-old question about which one is best, I love to Barbecue and I love to Grill. You need to choose your cooking method for grilling perfect steak as much as you have to choose the right steak.

I love food cooked both ways, this section relates to Grilling Perfect Steak.

Barbecue

The art of barbecue is to slow cook over the coals. Taking time to cook the food gently, possibly turning regularly, keeping an eye on your food so you do not char the meat or burn a marinade. Slowly, Slowly This is ideal for medium well steaks to well done.

Grilling

Fire up the barbecue, let it get Hot, throw on Your Steaks and start grilling. Thats about it. Fast and hot.

Just keep an eye on your steaks and use a meat thermometer to check the temperatures, or you can use the steak doneness hand test technique outlined below. Grilling is the way to barbecue steak Blue through to medium.

 

Grilling Perfect Steak - The Testing

The Hand Test Technique

Get your flat hand, make sure it’s palm up and hold it out in front of you. Now relax that hand.

With your other hand, using your index finger, press lightly on the relaxed hand, on the fleshy part at the base of your thumb.

The feeling now is the same as a Blue Steak.

The Hand Test Technique for a Rare steak
The Hand Test Technique for a Rare steak As we see by the first image if you take your flat, relaxed hand and lightly touch your index finger with your thumb.

With the index finger of your other hand, press lightly on the relaxed hand, the fleshy part at the base of your thumb.

This is the same fleshy feeling as a rare steak

The Hand Test Technique for a Medium to Rare steak

The Hand Test Technique for a Medium to Rare steak Now, with your thumb on the first hand, lightly touch the middle finger.

Touch the same place as before at the base of the thumb.

This is now the feeling of Rare to Medium Steak.



The Hand Test Technique for a Medium steak

The Hand Test Technique for a Medium steak Now, with your thumb, lightly touch the wedding ring finger, and touch the same spot.

This is now the feeling of a steak cooked Medium.






The Hand Test Technique for a Medium to well steak

The Hand Test Technique for a Medium well steak Now, with your thumb, lightly touch the little finger.

This is now the feeling of Medium Well.

The feeling of the Well Done Steak does not feel any harder than the medium well, and we ran out of fingers!..but lets hope you never have to cook steak to this level.

And if you have to make a cremated Steak, then just char it a little.

Test The Steak

Put the Technique in to Action

To use this technique for grilling perfect steak on the barbecue and grill, all you have to do for the test is to press your meat with the same pressure as you did on your hand. Voila. Enjoy
